I had been experimenting with dried yeast (Allinson's Easy Bake) before I posted my question, but hadn't been having terribly good results. Yesterday though, and inspired by your confidence in the stuff I had another go and, by making a liquid 'ferment' with it rather than just treating it as one of the dry ingredients (as the instructions suggest you should) I got an as-good-as-fresh result.
